Guacamole stuffed baby peppers with crisped prosciutto
I love avocado so I whipped up some guacamole to make mini stuffed peppers which were great to munch on during the game. The food was good and my Denver Broncos sucked! Well, that's a harsh assessment but what was Peyton Manning thinking with that toss - ugh!

Stoney Point - Jan. 13, 2013 - My guess is most of us are trying to eat healthier or have embarked on a new eating plan, it is the start of a new year after all and the air is thick with good intentions. It's also football season and as we watched my Denver Broncos in their nail biting game against the Baltimore Ravens, I tossed together a yummy and healthy munchie.

Everyone is on a different eating plan these days or have health concerns so certain foods are limited. Keep in mind most recipes can be augmented to suit your eating style. I love avocado so I whipped up some guacamole to make mini stuffed peppers which were great to munch on during the game.

The food was good and my Broncos sucked! Well, that's a harsh assessment but what was Peyton thinking with that toss - ugh! Football continues and the Super Bowl is just ahead so start thinking of Super Bowl munchies now and tweak them to suit your new eating plan so you stay on the rails. Cheers!

Guacamole Stuffed Baby Peppers with Crisped Prosciutto

1 bag of sweet baby peppers
1 jalapeño (use to taste). If jalapeño isn't the heat you crave then I have used sriracha sauce instead or your fav hot sauce. Again to taste but a teaspoon is a good start.
1 plum tomato
2 green onions or some red onion you have on-hand (use to taste)
2 avocados
1 lime
5 slices of prosciutto


Guacamole: mash the avocados, chop the tomato (no seeds) and add to guacamole, finely chop the onion or grate (I put the onion in my hand and add salt, mix it in my hand then squeeze the onion juice into the bowl with the avocados and toss in the onions), finely chop jalapeño and utilize based on your desire for heat or use the hot sauce of your choice, squeeze in the juice of the lime. I've also made my guacamole with garlic instead of onion or both - I didn't use the garlic this go round but again, it's now your dish. Remember it's easier to add more of an ingredient so keep tasting.

Preheat oven to 350
Cut peppers in half and put on a baking sheet
Put prosciutto in bundles beside the peppers
Bake for 10 minutes the tray is centre in the oven

Take out to cool then stuff with guacamole mixture. Roughly chop the crisped prosciutto and put on top of each. If meat isn't your thing, skip the prosciutto, they are delicious without it.
