A wonderful Viognier made by Vancouver-based winemaker, Mark Simpson
Reaching for your favourite go-to wine is adequate, but experimenting is a great way to discover new grape varietals. Have you tried Viognier? It seems to be undergoing a renaissance of late, undoubtedly due to its unique flavour profile of floral and stone fruit notes.

London - Feb. 25, 2013 - Reaching for your favourite go-to wine is adequate, but experimenting is a great way to discover new grape varietals. Have you tried Viognier? It seems to be undergoing a renaissance of late, undoubtedly due to its unique flavour profile of floral and stone fruit notes.

I recently discovered a wonderful version made by Vancouver-based winemaker, Mark Simpson. While I was originally drawn by the design of the bottle, the contents of Siren's Call Viognier certainly measured up. The citrus and lychee notes paired beautifully with spicy Spanish chorizo lightly fried with diced gala apple.

For the dish:
Simply slice the cured chorizo on an angle 1-cm thick, fry it to release the paprika oil (2-3 minutes), remove it from the pan with a slotted spoon, and set it aside. Fry the diced apple in the chorizo oil until slightly tender, then add the chorizo back to the pan, mix together and serve.
