Cornwall - Jan. 6, 2015: The Jerusalem Artichoke, native to eastern North America, is not truly an artichoke but a variety of sunflower with a lumpy, brown-skinned tuber that resembles a ginger root. They contain plenty of inulin, a type of prebiotic fiber that has been credited with a number of health benefits due to its medicinal properties. Stoney Point - Jan. 4, 2015: It's sad when the decorations get packed back up and the tree gets dragged out the door and tossed into the yard ready for its journey to get mulched. Our son was especially fond of our tree this year and was quick to grab one of our hands leading us to it when we got up in the morning to plug the lights in.
