Vegetable Adventures
The Jerusalem Artichoke, native to eastern North America, is not truly an artichoke but a variety of sunflower with a lumpy, brown-skinned tuber that resembles a ginger root. They contain plenty of inulin, a type of prebiotic fiber that has been credited with a number of health benefits due to its medicinal properties. They are also packed with B vitamins, particularly thiamine and they provide even more potassium than bananas which are famous for their high potassium content.

Saute them with some garlic and you have an amazing side or once sauteed then slice and put them in your salad.
